Crushed Truffle Potato Side

  • 150g new potatoes
  • Salt and pepper
  • ½ tbsp olive oil
  • 1 tbsp butter
  • ½ tsp truffle, chopped
  • Sprig of basil, to garnish
  • 1 tbsp crumbled blue cheese
  • Boil the potatoes in salty water for about 12 mins, or until tender. Drain, and season with salt and pepper. Add the olive oil and butter, and use a fork to crush. Stir in the chopped truffle and crumbled blue cheese, then serve as a side with a sprig of basil.
