Cumin and Zucchini Fritters
- 500g zucchini, spiralized into thin noodles
- 3 sliced spring onions
- 1 tsp ground cumin
- Bunch of coriander, chopped
- 1 lime, zest only
- 100g self-raising flour
- 1 beaten egg
- 2 tbsp olive oil
- Salsa, to serve
- Mix the spiralized zucchini, spring onions, coriander, lime zest, flour and cumin in a bowl. Stir in the egg, and season well. Heat the oil in a non-stick pan. Shape the fritters in your hands and fry for 3 mins on each side, or until golden. Drain on kitchen paper, and serve warm with spicy salsa.
