Cumin and Zucchini Fritters

  • 500g zucchini, spiralized into thin noodles
  • 3 sliced spring onions
  • 1 tsp ground cumin
  • Bunch of coriander, chopped
  • 1 lime, zest only
  • 100g self-raising flour
  • 1 beaten egg
  • 2 tbsp olive oil
  • Salsa, to serve
  • Mix the spiralized zucchini, spring onions, coriander, lime zest, flour and cumin in a bowl. Stir in the egg, and season well. Heat the oil in a non-stick pan. Shape the fritters in your hands and fry for 3 mins on each side, or until golden. Drain on kitchen paper, and serve warm with spicy salsa.
