Curried Black Beans
- 2 tbsp oil
- 1 onion, chopped
- 1 tbsp grated ginger
- ½ tsp chilli flakes
- 1 tsp ground coriander
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 200g chopped tomatoes from a tin
- ½ tsp sea salt
- 400g tin of black beans, not drained
- Basmati rice, to serve
- Gently fry the onions for 4 mins in the oil, then add the ginger, chilli, and spices. Cook for 2 mins more, then pour in the tomatoes and bring to a gentle simmer. Cook for about 5 mins, then remove from the heat and blend with a stick blender until smooth.
- Return the pan to the heat and add the black beans with their liquid. Season to taste, then simmer for a couple of mins to heat through. Serve with basmati rice - delicious!
