Curried Black Beans

  • 2 tbsp oil
  • 1 onion, chopped
  • 1 tbsp grated ginger
  • ½ tsp chilli flakes
  • 1 tsp ground coriander
  • 1 tsp cumin seeds
  • 1 tsp ground turmeric
  • 200g chopped tomatoes from a tin
  • ½ tsp sea salt
  • 400g tin of black beans, not drained
  • Basmati rice, to serve
  • Gently fry the onions for 4 mins in the oil, then add the ginger, chilli, and spices. Cook for 2 mins more, then pour in the tomatoes and bring to a gentle simmer. Cook for about 5 mins, then remove from the heat and blend with a stick blender until smooth.
  • Return the pan to the heat and add the black beans with their liquid. Season to taste, then simmer for a couple of mins to heat through. Serve with basmati rice - delicious!
