Curried Cauliflower with Paneer and Peas

  • 2 tbsp oil
  • 225g cubed paneer
  • 1 cauliflower, broken into florets
  • 2 sliced onions
  • 2 crushed garlic cloves
  • 2 tbsp tikka masala paste
  • 500g passata
  • 200g peas
  • Chopped coriander
  • Fry the paneer in the oil until crisp, then remove and set aside. Add the cauliflower to the pan and cook for 10 mins to brown, then stir in the onions and cook for 5 mins. Stir in the curry paste and garlic, add the passata and 250ml water, season well and simmer - covered - for about 20 mins.
  • Add the peas and paneer to the pan and cook for 5 mins more, then stir through the coriander and serve with rice and naan.
