Curried Pork and Grains Salad

  • 50g bulgur wheat
  • 1 tsp curry powder
  • ¼ tsp cumin seeds
  • 1 tsp veg stock powder
  • 2 dates, sliced
  • 3 spring onions, sliced
  • 4 tsp chopped mint leaves
  • Handful of chopped coriander
  • ¼ cucumber, chopped
  • 2 tomatoes, sliced
  • 120g leftover cooked pork or ham
  • Tip the bulgur wheat into a small pan with the cumin seeds, veg stock powder, dates, spring onions, and curry powder. Cover with 300ml boiling water, and cook for 8 mins or until the liquid has been absorbed. Leave to cool.
  • Stir in the tomatoes, pork, mint, coriander, and cucumber, then serve in bowls topped with lemon wedges.
