Date and Beef Stew

  • 2 tbsp oil
  • 800g stewing beef chunks
  • Seasoned flour
  • 400g chopped carrots
  • 1 sliced onion
  • 1 tsp grated ginger
  • 6 large pitted dates, finely chopped
  • 2 star anise
  • 4 tbsp soy sauce
  • 500ml beef stock
  • Preheat the oven to 160C. Heat 1.5 tbsp of oil in a casserole dish and dust the beef in seasoned flour. Fry in batches, browning all over, before setting aside on a plate. Add the remaining oil to the pan and cook the onion and carrots for 8 mins to soften, then add the dates and ginger and cook for 3 mins more.
  • Return the meat to the pan with the stock, soy sauce and star anise. Cover with the lid and place in the oven for 1 hour, then remove the lid and cook for an hour more, stirring every 15 mins or so. If the sauce needs thickening, cook for a few mins on the hob to reduce further. Serve with mash or sticky rice and enjoy!
