Easiest Ever Cottage Pie

  • 50ml olive oil
  • 1 onion, chopped
  • 650g beef mince
  • 2 tbsp tomato puree
  • 1 tbsp flour
  • 150ml red wine
  • 4 sprigs of thyme, leaves only
  • 400ml beef stock Worcestershire sauce, to taste
  • Salt and pepper
  • Mashed potatoes, to top
  • Cooked green beans, to serve
  • Heat half the oil in a large pan, and cook the onions until softened. Remove and set aside. Fry the mince in the same pan for 5 minutes to brown all over, then stir in the cooked onion, tomato puree, and flour. Cook for a couple of minutes, then add the wine and thyme.
  • Add the stock and simmer for about 45 minutes. Season to taste, add a dash or two of Worcestershire sauce, and heat the grill to high. Put the mixture in a baking dish, spoon or pipe over the mashed potato, and grill for 8-10 minutes or until golden. Serve with green beans. Yum!
