Easy Apple and Vanilla Puff Pastry Tart

  • 375g all-butter puff pastry sheet
  • 5 large apples, peeled and sliced
  • 1 lemon, juice only
  • 25g chopped butter
  • 3 tsp vanilla sugar
  • 1 tbsp caster sugar
  • 4 tbsp apricot jam
  • Preheat the oven to 220C. Roll the pastry and cut into a 35cm circle, then transfer to a lined baking sheet. Toss the apple slices in the lemon juice, then spread over the pastry circle, leaving a 2cm border. Curl the border slightly to make a crust.
  • Dot the apples with the butter and sprinkle with the caster sugar and vanilla sugar. Bake for 20 mins, or until the pastry is crisp. Warm the apricot jam in a small saucepan, then brush all over the apples and pastry crust. Leave to cool slightly, then serve with whisky cream - yum!
