Easy Beef Burritos
- 2 tbsp oil
- 1 chopped onion
- 4 chopped garlic cloves
- 1 tbsp each ground cumin and coriander
- Pinch of cayenne pepper
- 1 tsp oregano
- Pinch of sugar
- 1 tbsp red wine vinegar
- 400g tin of chopped tomatoes
- 400g tin of red kidney beans, drained
- 8 corn tortillas
- 500g cooked rice
- Guacamole, salsa and relish to serve
- Fry the onions in the oil for 8 mins to soften, then add the spices, oregano and garlic and cook for 1 minute more. Add the mince and sizzle until browned, then stir in the sugar, vinegar and tomatoes. Simmer for 5 mins, add the beans and a splash of water, then season, stir and simmer for 20 mins until thick and unctuous.
- Heat the tortillas and pile some rice and beef along the middle of each one. Scatter with your choice of topping, then carefully roll into burritos to serve.
