Easy Beef Burritos

  • 2 tbsp oil
  • 1 chopped onion
  • 4 chopped garlic cloves
  • 1 tbsp each ground cumin and coriander
  • Pinch of cayenne pepper
  • 1 tsp oregano
  • Pinch of sugar
  • 1 tbsp red wine vinegar
  • 400g tin of chopped tomatoes
  • 400g tin of red kidney beans, drained
  • 8 corn tortillas
  • 500g cooked rice
  • Guacamole, salsa and relish to serve
  • Fry the onions in the oil for 8 mins to soften, then add the spices, oregano and garlic and cook for 1 minute more. Add the mince and sizzle until browned, then stir in the sugar, vinegar and tomatoes. Simmer for 5 mins, add the beans and a splash of water, then season, stir and simmer for 20 mins until thick and unctuous.
  • Heat the tortillas and pile some rice and beef along the middle of each one. Scatter with your choice of topping, then carefully roll into burritos to serve.
