Easy Beetroot Dal

  • 250g split red lentils
  • 1 large beetroot, peeled and grated
  • 1 tsp sea salt
  • ½ tsp turmeric
  • Give the lentils a good rinse and drain well. Add to a saucepan with the grated beetroot and a litre of water, and stir well.
  • Add the salt and turmeric, then cook gently for 20 mins or until the lentils are softened and begin to break down. Leave to cool a little, then serve as a side to an Indian feast.
