Easy Cheesy Mushrooms
- 4 portobello mushrooms
- 100g gorgonzola, crumbled
- 25g walnuts, toasted and chopped
- 4 thyme sprigs
- knob of butter, chopped
- rocket, to serve
- Preheat the oven to 200C and arrange the mushrooms - cut-side up - on a baking tray. Scatter with the cheese, thyme, mushrooms and butter, then cook for 10 mins until gooey and softened. Serve with rocket leaves, and enjoy.
