Easy Chicken Arrabbiata

  • Olive oil
  • 400g chicken breast, cut into chunks
  • 400g tin of chopped tomatoes
  • ¼ tsp chilli flakes
  • 500g penne
  • 1 broccoli head, cut into florets
  • Parmesan shavings, to serve
  • Heat the olive oil in a pan and fry the chicken chunks until browned. Stir in the chopped tomatoes and chilli flakes, and simmer for 5 mins until the meat is cooked. Season well.
  • Meanwhile, cook the penne until al dente. Add the broccoli for the last two mins, then drain the lot and mix into the pan with the sauce. Serve in bowls with parmesan shavings, and enjoy.
