Easy Chicken Quesadilla

  • 8 large flour tortillas
  • 2 sliced cooked chicken breasts
  • 150g sweet peppers from a jar, drained and chopped
  • ½ sliced red onion
  • Handful of rocket leaves
  • 200g comte cheese, grated
  • Sprinkle 4 of the tortillas with all the ingredients. Top with the remaining tortillas to create a sandwich.
  • Heat a frying pan and add a quesadilla for 4 mins until the tortilla is browned. Flip and cook on the other side, then repeat with the remaining quesadillas. Slice into wedges and serve with salads and dips.
