Easy Crispy Squid
- 1 tbsp cornflour
- 2 tbsp polenta
- 1 tsp smoked paprika
- 200g squid rings
- Veg oil for frying
- Garlic mayo, to serve
- Mix the cornflour and polenta with the paprika in a bowl. Add the squid rings and mix to coat completely.
- Heat the oil in a saucepan until sizzling temperature, then fry the squid rings in batches for 2 mins (no longer!), flipping once during frying until golden and crisp. Remove and drain on kitchen paper, then sprinkle with sea salt and serve with garlic mayo and chips.
