Easy Dark Chocolate Mousse
- 150g dark chocolate
- 6 egg whites
- 2 tbsp sugar
- 4 tbsp crème fraîche, to serve
- Grated dark chocolate, to serve
- Melt the chocolate in a glass bowl over a simmering pan of water. Whisk the egg whites to soft peaks, scatter in the sugar and whisk again.
- Add about ⅓ of the egg whites to the chocolate, and mix vigorously. Fold in the remaining egg whites with a metal spoon, then spoon into ramekins and chill in the fridge for 3 hours. When ready to serve, finish with a dollop of crème fraîche and some grated chocolate.
