Easy Dark Chocolate Mousse

  • 150g dark chocolate
  • 6 egg whites
  • 2 tbsp sugar
  • 4 tbsp crème fraîche, to serve
  • Grated dark chocolate, to serve
  • Melt the chocolate in a glass bowl over a simmering pan of water. Whisk the egg whites to soft peaks, scatter in the sugar and whisk again.
  • Add about ⅓ of the egg whites to the chocolate, and mix vigorously. Fold in the remaining egg whites with a metal spoon, then spoon into ramekins and chill in the fridge for 3 hours. When ready to serve, finish with a dollop of crème fraîche and some grated chocolate.
