Easy Greek Sardine Traybake
- Bunch of asparagus
- 1 olive focaccia roll or similar
- 2 x 100g tins of quality sardines in olive oil
- 250g premade Greek salad without leaves
- Preheat the oven to 200C. Blitz 2 asparagus spears with the bread in a food processor to make green crumbs.
- Arrange the sardines, the salad of feta, olives, tomatoes and cucumber, and the remaining asparagus in a roasting tin and drizzle with oil. Cook for 15 mins. Meanwhile, fry the green breadcrumbs in a splash of oil in a pan for 4 mins until slightly crisp, and scatter over the top of the traybake before serving.
