Easy Greek-Style Meatballs

  • 12 beef meatballs
  • 1 chopped onion
  • 1 tsp ground cumin
  • 400g tin of chopped tomatoes with herbs
  • Handful of pitted black olives
  • 10 mint leaves, torn
  • 100ml beef stock
  • 50g crumbled feta
  • Add a splash of oil to a frying pan and cook the meatballs for 8 mins or until browned all over. Toss in the onion and fry for 3 mins more.
  • Stir the tomatoes, cumin, olives, mint leaves and stock into the pan and cook for 5 mins to thicken. Season well, then serve with rice and plenty of crumbled feta scattered over the top.
