Easy Harissa Salmon Pilaf

  • 2 tbsp olive oil
  • 1 sliced onion
  • 1 tsp each ground coriander and turmeric
  • 2 tbsp harissa
  • 500g cooked brown rice
  • 2 salmon fillets, poached
  • 40g chopped pistachios
  • 70g pomegranate seeds
  • 50g raisins
  • Bunch of parsley, chopped
  • Heat the oil in a casserole and add the onion to fry for 10 mins, or until golden. Stir in the spices and harissa paste, fry for 1 min, then stir in the rice and cook for 5 mins more. Flake the salmon and stir into the rice, then finish with the pomegranate, pistachios, nuts, and parsley. Easy peasy!
