Easy Hunter’s Chicken

  • 4 chicken breasts
  • 12 rashers of smoked streaky bacon
  • 250ml smoky barbecue sauce
  • 500g mozzarella
  • 3 tbsp parmesan, grated
  • Chips and peas, to serve
  • Preheat the oven to 200C. Season the chicken breasts and wrap each one with 3 rashers of bacon to seal. Transfer to a baking tray and bake for 30 mins, or until cooked through.
  • Drizzle over the barbecue sauce, top with torn mozzarella and scatter generously with parmesan. Bake for another 8 mins or until everything is golden and bubbling, and then for a hit of nostalgia, serve with a big pile of chips and some peas, with the cooking juices poured over.
