Easy Lamb and Mushroom Ragu

  • 2 tbsp olive oil
  • 150g soffritto mix
  • 250g brown mushrooms, finely chopped
  • 500g lamb mince
  • 150ml red wine
  • 400g tin of chopped tomatoes
  • 100g smoked tomato paste or similar
  • 1 tsp porcini powder (optional)
  • 300g cooked pasta or rice, to serve
  • Grated parmesan, to serve
  • Cook the soffritto mix for 5 mins to soften in the oil, then add the lamb mince to the pan and cook for 3 mins to brown all over. Pour in the wine and bubble for 3 mins, then tip in the chopped tomatoes, tomato paste, porcini powder and chopped mushrooms.
  • Bring the mixture to a simmer and season well. Cook for 20 mins or so, or until thickened and saucy, then spoon over cooked rice or pasta to serve with a scattering of parmesan.
