Easy Lamb Tagine
- 3 tbsp olive oil
- 1⁄2 red onion, chopped
- 1⁄2 red capsicum pepper, chopped
- 1 garlic clove, finely chopped
- 1 lamb fillet, cut into chunks
- Pinch of cinnamon
- 1 tbsp tomato puree
- 1⁄2 tsp ground cumin
- Pinch of ground ginger
- 1⁄2 tbsp honey
- 1 beef stock cube, crumbled
- 110g mixed beans from a can, drained
- 4 tbsp fresh coriander, chopped
- Salt and pepper
- Apricot and mint couscous (or similar) to serve
- Heat up the oil in a large pan, and brown the lamb chunks on all sides. Add the onion and capsicum pepper to the pan, and cook for 3 minutes without browning. Add all the remaining ingredients, except the coriander and the beans, and simmer gently for 10 minutes.
- Now’s the time to add the beans and the coriander, and some seasoning to taste. Add a splash of water if you need to loosen the mixture a little, and serve with couscous. Perfect!
