Easy Mediterranean Beef and Olive Stew
- 1 sliced onion
- 1 sliced garlic clove
- 2 tbsp olive oil
- 300g thinly sliced beef steak
- 1 yellow capsicum, thinly sliced
- 400g can of chopped tomatoes
- Sprig of rosemary, chopped
- Handful of kalamata olives or similar
- Cook the onion and garlic in some oil for about 5 mins to soften. Tip in the sliced beef, the capsicum, tomatoes, and rosemary, and bring to the boil. Simmer for a good 15 mins or so, until the meat is cooked through. You may want to add a bit of hot water, if it’s starting to look a little dry. Stir in the olives, and serve with polenta or mashed potato.
