Easy Peri-Peri Chicken Thigh Traybake

  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • ½ tbsp ground coriander
  • 1 tsp chilli powder
  • 1 tsp dried oregano
  • 4 crushed garlic cloves
  • 1 lemon, zest and juice
  • 1.2kg chicken thighs
  • Chopped parsley, to serve
  • Mix the herbs, spices, garlic, lemon juice and zest in a bowl with some seasoning. Rub all over the chicken thighs, massaging well into the meat. Leave to marinate in the fridge overnight.
  • When ready, heat the oven to 200C. Add the chicken to a baking tray and back for 50 mins or until cooked through, turning once halfway through the cooking time. Sprinkle with parsley and serve with bread or rice.
