Easy Sausage and Gnocchi Bake

  • 1 red, orange, and yellow pepper, deseeded and cut into chunks
  • 250g gnocchi
  • 4 pork sausages
  • 1 tbsp olive oil
  • Salt and pepper
  • Preheat the oven to 200C. Toss together the pepper chunks, gnocchi, and olive oil on a baking tray, and season very generously.
  • Place the sausages on the tray, and roast for 25 minutes. You want the sausages and gnocchi golden brown, and the peppers cooked and tender. Serve with crusty bread.
