Easy Sausage Goulash
- 2 tbsp olive oil
- 1 x pack of sausages, cut into large chunks
- 2 chopped onions
- 400g tin of chopped tomatoes
- 1 tbsp tomato purée
- 1 tbsp bouillon or veg stock cube
- 1 tbsp paprika
- Pinch of sugar
- 4 potatoes, cut into chunks
- 2 handfuls of shredded kale
- Heat 1 tbsp of oil in a pan and fry the sausage chunks until browned all over. Remove from the pan and set aside. Chuck in the onions with the remaining oil, and fry for 5 mins or until golden. Pour in the tomatoes, add the purée, then add 2 tins of water and the bouillon or stock. Add the paprika and sugar, plenty of salt and pepper, and bring to a simmer.
- Add the potatoes to the pan, simmer for 10 mins, then drop in the shredded greens and sausages and cook for about 5 mins. Serve with crusty bread. You can easily make this recipe vegetarian with meat-free sausages or your favourite meat substitute!
