Easy Seafood and Chorizo Rice

  • 1 tbsp olive oil
  • 1 leek, sliced
  • 110g chopped chorizo
  • 1 tsp turmeric
  • 300g long grain rice
  • 1 litre chicken stock
  • 200g peas
  • 400g seafood mix
  • Heat the oil in a large frying pan and soften the leeks for 5 mins. Add the chorizo and fry until the oils are released, then stir in the rice and turmeric to coat with the oils and take on the colour. Pour in the stock and simmer for 15 mins. Tip in the peas, then stir in the seafood mix and cook for 2 mins. When the rice is cooked, season liberally and serve with lemon.
