Easy Spanish Rice and Beans

  • 1 tbsp olive oil
  • 1 chopped onion
  • 1 red capsicum, sliced
  • 2 tsp smoked paprika
  • 250g cooked brown rice
  • 400g tin of red kidney beans, drained
  • 3 tomatoes, chopped
  • 100g peas
  • 75g sliced black olives
  • Chopped coriander
  • Heat the oil in a small pan and fry the onion, capsicum and paprika for 5 mins to soften. Stir in the rice and beans, tomatoes, peas and a splash of hot water, then cook for 10 mins until piping hot. Season to taste, scatter with olives and coriander, and serve as a side at a barbecue. Nice!
