Easy Spanish Rice and Beans
- 1 tbsp olive oil
- 1 chopped onion
- 1 red capsicum, sliced
- 2 tsp smoked paprika
- 250g cooked brown rice
- 400g tin of red kidney beans, drained
- 3 tomatoes, chopped
- 100g peas
- 75g sliced black olives
- Chopped coriander
- Heat the oil in a small pan and fry the onion, capsicum and paprika for 5 mins to soften. Stir in the rice and beans, tomatoes, peas and a splash of hot water, then cook for 10 mins until piping hot. Season to taste, scatter with olives and coriander, and serve as a side at a barbecue. Nice!
