Easy Spring Onion Fritters

  • 200g flour
  • 2 tsp baking powder
  • Pinch of salt
  • 2 beaten eggs
  • 200ml milk
  • 8 sliced spring onions
  • 2 tbsp chopped parsley
  • Pinch of smoked paprika
  • ½ lemon, zest only
  • 15g butter
  • Garlic mayo, to serve
  • Combine the flour, baking powder, salt and paprika in a mixing bowl. Make a well in the middle and add the egg. Whisk together and gradually add the milk, continuing to whisk until you have a smooth batter. Mix in the lemon zest, spring onions and parsley.
  • Heat half the butter in a non-stick frying pan. Ladle 4 tbsp of the batter into the pan and cook for 2 mins on each side, or until golden. Remove and repeat with the remaining batter, then serve the fritters warm as part of a tapas spread with garlic mayo.
