Easy Steak and Mushroom Stroganoff
- 1 tbsp veg oil
- 1 chopped red onion
- 2 chopped garlic cloves
- 1 tsp smoked paprika
- 1 green capsicum, chopped
- 200g brown mushrooms, sliced
- 2 tbsp red wine vinegar
- 150ml beef stock
- 200g beef steak, sliced
- 150ml crème fraîche
- Fry the onions in the oil until softened. Add the paprika and garlic, cook for 2 mins, then add the capsicum and mushrooms and fry for 8 mins, or until softened.
- Pour in the vinegar and boil to reduce. Pour the stock over the mixture, let it bubble for a few minutes, then add the beef and cook for 2-3 mins or to your liking. Stir in the crème fraîche, season well, then serve with tagliatelle. Perfect!
