Easy Three Bean Casserole
- 1 chopped onion
- 2 crushed garlic cloves
- Olive oil
- 1 tbsp ground cumin
- 400g tin of chopped tomatoes
- 200g tin of white beans, drained
- 200g tin of kidney beans, drained
- 100g green beans, chopped
- 120g spinach leaves, chopped
- Cook the onion and garlic in a splash of oil to soften, then stir in the cumin and some seasoning and cook for a few minutes. Tip in the tomatoes and a can full of water and simmer for 10 mins to thicken.
- Add the beans to the pan and cook for 5 mins, then stir in the spinach and cook for another 5 mins to wilt. Serve piping hot with crusty wholemeal bread - delicious!
