Easy Three Bean Casserole

  • 1 chopped onion
  • 2 crushed garlic cloves
  • Olive oil
  • 1 tbsp ground cumin
  • 400g tin of chopped tomatoes
  • 200g tin of white beans, drained
  • 200g tin of kidney beans, drained
  • 100g green beans, chopped
  • 120g spinach leaves, chopped
  • Cook the onion and garlic in a splash of oil to soften, then stir in the cumin and some seasoning and cook for a few minutes. Tip in the tomatoes and a can full of water and simmer for 10 mins to thicken.
  • Add the beans to the pan and cook for 5 mins, then stir in the spinach and cook for another 5 mins to wilt. Serve piping hot with crusty wholemeal bread - delicious!
