Easy Tuna and Green Bean Salad

  • 400g green beans, trimmed
  • 250g tin of tuna in spring water, drained
  • 1 lemon, zest and juice only
  • 3 tbsp mayo
  • 1 tbsp chopped parsley
  • 2 tbsp olive oil
  • Salt and pepper
  • Set a colander over a pan of boiling water. Add the beans to the colander, then cover with a saucepan lid to steam for 3 mins. Remove and set aside.
  • Mix the tuna with the lemon juice, mayo and parsley in a bowl, slightly breaking up the tuna pieces as you mix. Season well. Toss the green beans in olive oil and mix with the tuna salad. Sprinkle with lemon zest to serve - perfect!
