Easy Tuna Fish Cakes with Green Beans

  • 600g potatoes, peeled and cut into chunks
  • 1 beaten egg
  • 2 tbsp oil
  • 200g tin of tuna in oil, drained
  • 200g tin of sweetcorn, drained
  • 400g green beans, trimmed
  • Preheat the oven to 180C. Boil the potato chunks in salted water for 10-15 mins or until tender, then drain, mash and mix in the beaten eggs. Flake the tuna into the mash and stir in the corn, then season well and form the mixture into 8 evenly-sized cakes.
  • Heat a splash of oil in a non-stick pan and fry the fish cakes for 3 mins on each side, or until golden and starting to crisp. Transfer to a baking tray and cook for another 10 mins in the oven. Meanwhile, boil the green beans for 5 mins or so, then serve alongside the fish cakes.
