Easy Vegan Burger

  • ½ onion, finely chopped
  • ¼ red capsicum, chopped
  • Handful of parsley
  • 400g tin of chickpeas, drained
  • 2 tsp garam masala
  • 1 tbsp tomato purée
  • 2 tbsp flour
  • 1 tbsp couscous
  • Oil for frying
  • Burger buns and all your favourite salads and sides, to serve
  • Chuck the onion, capsicum, parsley, and most of the chickpeas in a food processor and blitz to a coarse paste. Mash in the remaining chickpeas along with the garam masala, purée, flour, and couscous. Season liberally, and shape the mix into 4 patties. Let them rest in the fridge for at least 30 mins, then fry in a splash of oil until golden and crisp on both sides. Serve in buns, with whatever else you fancy!
