Easy Veggie Caesar Salad

  • 3 tbsp olive oil
  • 2 slices of day old bread, crusts removed, cubed
  • 1 romaine lettuce heart, sliced
  • 30g parmesan, shaved
  • Salt and pepper
  • 6 tbsp may
  • 1.5 tbsp Dijon mustard
  • 2 tbsp grated parmesan
  • 1⁄2 garlic clove, crushed
  • A few drops of Worcestershire sauce
  • Make your croutons by heating the oil in a frying pan, and frying the bread cubes for a few minutes until golden all over. Remove with a slotted spoon, and drain on kitchen paper. Season liberally.
  • Make the dressing by putting all the ingredients in a small bowl and mixing with a fork in 1-2 tbsp water. Toss the lettuce leaves in a serving bowl with the dressing, chuck in the croutons and shaved parmesan, and serve!
