Elysian Springs
Elysian Springs is a 200-acre estate located in the pristine northern end of the Adelaide Hills district, bordering the Eden Valley. It is the birthplace of the River Torrens, the fresh water tributary key to the establishment of the capital of South Australia, the city of Adelaide.
The property started its journey when established by the Seppelt family back in 1980 when it was planted to Syrah, Sauvignon Blanc, Pinot Noir and Chardonnay. Today, the journey continues with the use of sustainable viticulture along with biodynamic and organic techniques to produce wines with a true sense of place.
