Falafel Balls with Sunflower Seeds
- 75g sunflower seeds
- 90g cashews
- 1 tbsp peanut butter
- Handful of chopped basil
- ½ tsp ground cumin
- 2 tbsp lemon juice
- 1 tsp chopped coriander leaves
- 1 crushed garlic clove
- 1 chopped shallot
- 40g toasted sesame seeds
- Tahini, to serve
- Preheat the oven to 220C. Place all of the ingredients except the sesame seeds and tahini into a food processor. Season, then pulse to thoroughly blend. For the mixture into 4 large round balls, then roll in the sesame seeds and bake for 20 mins, or until crisp. Serve hot with tahini dipping sauce and flatbreads - fantastic!
