Falafel Balls with Sunflower Seeds

  • 75g sunflower seeds
  • 90g cashews
  • 1 tbsp peanut butter
  • Handful of chopped basil
  • ½ tsp ground cumin
  • 2 tbsp lemon juice
  • 1 tsp chopped coriander leaves
  • 1 crushed garlic clove
  • 1 chopped shallot
  • 40g toasted sesame seeds
  • Tahini, to serve
  • Preheat the oven to 220C. Place all of the ingredients except the sesame seeds and tahini into a food processor. Season, then pulse to thoroughly blend. For the mixture into 4 large round balls, then roll in the sesame seeds and bake for 20 mins, or until crisp. Serve hot with tahini dipping sauce and flatbreads - fantastic!
