Falafel Burgers

  • 250g chickpeas, soaked overnight
  • 1 onion, very finely chopped
  • 2 crushed cloves of garlic
  • 2 tsp ground cumin
  • 2 tsp ground coriander seeds
  • 6 tbsp chopped parsley
  • ½ tsp chilli powder
  • 2 tbsp flour
  • 1 tsp salt
  • Oil for deep frying
  • Buns, hummus, and tahini to serve
  • Pulse the drained chickpeas in a food processor until lightly broken up. Add all of the remaining ingredients, and pulse until a breadcrumb texture is achieved. Form into 10cm patties, and fry in hot oil for 4-5 mins or until golden and crisp. Serve in buns with hummus, tahini, or whatever else you fancy.
