Fennel and Apple Salad

  • 50g halved walnuts
  • 1 fennel bulb, thinly sliced
  • 1 green apple, sliced
  • 1 sweet apple, sliced
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 1 tsp honey
  • 75g shaved parmesan
  • Preheat the oven to 180C and spread the walnut halves on a baking sheet. Bake for 7 mins to lightly toast, then add to a large bowl. Stir in the sliced fennel and apples.
  • Mix the vinegar, honey and oil in a small jug, season well, then pour over the fennel and apple mixture. Toss to coat, then top with shaved parmesan to serve. Perfect!
