Feta and Apple Summer Salad

  • 3 small red apples, sliced
  • 100g mixed peppery leaves
  • 200g feta, chopped
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 2 tbsp runny honey
  • 1 tsp chilli flakes
  • Toss together the apple slices and mixed leaves, and arrange on a platter. Dot with the cheese and scatter with the lemon zest. Mix the lemon juice, oil, honey, some salt and pepper and the chilli flakes, then drizzle all over the salad before serving as a side. Perfect!
