Feta and Watermelon Sunshine Salad
- 1 cucumber, chopped
- 250g feta, cubed
- 25 kalamata olives
- Handful of rocket leaves
- ½ watermelon, sliced into wedges
- For the Dressing
- 100ml white wine vinegar
- 2.5 cm piece of ginger, grated
- 2 tbsp chopped mint
- 1 lime, juice only
- 300ml olive oil
- Salt and pepper
- Pop the cucumber into a bowl with the other salad ingredients, except the watermelon. Gently mix to combine.
- Make the dressing by mixing together the ingredients, and seasoning to taste. Pour over the salad, and mix to combine. Serve on a plate, with slices of watermelon on the side, and maybe some warm pitta.
