Feta Cakes
- A splash of oil
- 700g potatoes, peeled and chopped into chunks
- 1 lemon, zest
- ½ lemon, juice
- 6 chopped spring onions
- 2 tbsp chopped mint
- 3 tbsp chopped flatleaf parsley
- 100g crumbled feta
- 1 egg
- 6 tbsp brown flour
- ½ tsp smoked paprika
- Greek salad, to serve
- Preheat the oven to 200C and add a splash of oil to a non-stick baking sheet. Boil the potatoes for 20 mins, or until very tender, then drain well and mash with plenty of black pepper, the lemon juice and zest, spring onions, mint, and 2 tbsp of parsley. Stir in the feta to combine.
- Beat the egg in a bowl, then mix together the flour, paprika, and 1 tbsp of parsley in another. Shape the cooled potato mixture into 8 patties, then coat with the egg and dredge in the flour mix. Arrange on the baking sheet, and bake for 15 mins or until just golden. Flip with a palette knife and bake for 10-15 mins more on the other side. Serve with Greek salad, and enjoy.
