Feta, Lemon and Spinach Rice

  • 1 tbsp oil
  • 2 chopped onions
  • 3 sliced garlic cloves
  • 300g easy-cook brown rice
  • 700ml veg stock
  • 400g frozen spinach
  • 20g chopped dill
  • 1 lemon, zest and juice only
  • 40g chopped walnuts
  • 75g crumbled feta
  • Fry the onions and garlic in the oil until softened. Tip the rice, stock, frozen spinach, half the dill and lemon zest into the pan, and cook for 25 mins on low until the rice is tender and the stock is absorbed. Scatter with the remaining dill and lemon zest, along with the walnuts and feta, and toss together with the lemon juice. Serve hot or cold, and enjoy.
