Feta, Lime and Sweetcorn Salad

  • 1 large spring onion, finely chopped
  • 1 tbsp olive oil
  • 200g sweetcorn
  • 1 lime, zest and juice only
  • Small bunch of coriander, chopped
  • 80g feta, crumbled
  • Dried chilli flakes
  • Gently fry the spring onion in the olive oil until softened, then stir in the sweetcorn and cook for 2 mins. Add the lime zest and juice, the coriander and plenty of salt and pepper.
  • Tip the sweetcorn mixture into a bowl and sprinkle with the crumbled feta. Scatter with chilli flakes, and serve with more coriander on top.
