Fettuccine with Melted Brie

  • 300g brie, cut into cubes
  • 2 crushed garlic cloves
  • 6 tbsp olive oil
  • 300g halved cherry tomatoes
  • Large handful of chopped basil
  • ½ lemon, grated zest and juice only
  • 400g fettuccine
  • Put the garlic, oil, tomatoes, basil, lemon zest and juice and brie in a large bowl. Season, mix together and leave to sit for 10 mins.
  • Cook the pasta until al dente in salted boiling water, then drain. Toss the hot pasta with the brie mixture, and serve immediately.
