Figs with Pine Nuts and Goats Curd Recipe

What you'll need:

  • 2 tbsp runny honey
  • A couple of sprigs of thyme
  • 6 ripe figs, halved
  • 2 tbsp pine nuts
  • 125g soft goats curd or cheese
Time: 10 minutes
Serves: 2

Method

First

First, infuse your honey with the aromatic thyme. Put the honey in a saucepan, and warm through on a medium heat with the thyme sprigs tossed in. After a few minutes, set aside to cool, and allow those flavours to come together.

Second

On a hot griddle pan, place your figs cut side down. Cook until charred and beginning to caramelise. Meanwhile, toast your pine nuts in a dry frying pan over a medium heat for 3 minutes.

Third

Take your fig halves and arrange on a plate, cut side up. Season well with salt and pepper, top with a spoonful of curd, drizzle with the infused honey and then scatter with the pine nuts. Yum!
