Five Bean Chilli

  • 1.5 tbsp veg oil
  • 1 sliced onion
  • 2 red capsicum, sliced
  • 2 crushed garlic cloves
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 2 tsp smoked paprika
  • 400g tin of chopped tomatoes
  • 400g tin of black beans, drained
  • 400g tin of mixed beans, drained
  • 250g cooked brown rice, to serve
  • Chopped coriander
  • Heat the oil in a large pan and gently fry the onion and capsicums for 10 mins, or until golden. Add the spices and garlic, fry for a minute, then pour in the tomatoes, beans, 50ml water, a pinch of sugar, and plenty of seasoning. Simmer for 20 mins to thicken, then serve with cooked brown rice and some coriander.
